Lemon rice is a tangy and flavourful dish commonly found in South Indian cuisine. It is made by cooking rice with a zesty lemon seasoning that includes lemon juice, mustard seeds, curry leaves, and other spices. Lemon rice is often enjoyed as a light and refreshing meal or as part of a larger spread. Here's a simple recipe for making lemon rice:
Ingredients:
? 1 cup basmati rice (or any long-grain rice)
? 2 tablespoons oil
? 1 teaspoon mustard seeds
? 1 teaspoon split urad dal (white lentils)
? 1/2 teaspoon chana dal (split chickpeas)
? 8-10 curry leaves
? 2 green chilies, slit lengthwise
? 1/4 teaspoon turmeric powder
? Salt to taste
? Juice of 1 lemon
? Fresh coriander leaves, chopped (for garnish)
Instructions:
? Rinse the basmati rice in water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
? Cook the rice according to the instructions on the package. Once cooked, spread the rice on a wide plate or tray and let it cool completely. This helps in getting separate grains of rice.
? Heat oil in a pan or skillet over medium heat.
? Add the mustard seeds and let them splutter.
? Add the split urad dal and chana dal to the pan and sauté until they turn golden brown.
? Add the curry leaves and green chilies to the pan and sauté for a minute.
? Add the turmeric powder and salt to the pan and mix well.
? Add the cooked and cooled rice to the pan. Gently mix the rice with the spices, taking care not to break the grains.
? Squeeze the juice of one lemon over the rice and mix well to evenly distribute the lemon flavor.
? Cook the rice for a couple of minutes, stirring gently, until all the ingredients are well combined and heated through.
? Remove the pan from heat. Garnish with freshly chopped coriander leaves.
