Mushroom rice is a flavourful dish that combines the earthy and savory taste of mushrooms with rice. Here's a simple recipe for mushroom rice:
Ingredients:
1 cup long-grain white rice (jasmine or basmati rice works well)
2 cups water or vegetable broth
8 ounces (about 2 cups) mushrooms, sliced (you can use any type of mushrooms you prefer)
2 tablespoons butter or olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon dried thyme (or use fresh thyme if available)
Salt and pepper to taste
2 tablespoons chopped fresh parsley for garnish (optional)
Instructions:
Rinse the Rice:
Rinse the rice under cold water until the water runs clear. Drain well.
Sauté Mushrooms:
Heat a large skillet or saucepan over medium-high heat and add the butter or olive oil.
Add the sliced mushrooms and sauté them until they start to brown and release their moisture, about 5-7 minutes.
Remove half of the sautéed mushrooms and set them aside for later garnish.
Cook Onion and Garlic:
To the remaining mushrooms in the pan, add the chopped onion and minced garlic. Sauté for another 2-3 minutes until the onion becomes translucent.
Add Rice and Seasonings:
Add the rinsed rice to the pan and sauté for a few minutes to lightly toast the rice.
Stir in the dried thyme (or fresh thyme if using), salt, and pepper.
Simmer:
Pour in the water or vegetable broth and bring the mixture to a boil.
Reduce the heat to low, cover the pan, and simmer for about 15-20 minutes or until the rice is tender and has absorbed the liquid. Check the cooking time on the rice package for specific instructions.
Fluff and Garnish:
Once the rice is cooked, fluff it with a fork.
Garnish with the reserved sautéed mushrooms and chopped fresh parsley, if desired.
Serve:
Mushroom rice can be served as a side dish with roasted or grilled meats, as a vegetarian main course, or as part of a larger meal.
Enjoy your homemade mushroom rice! It's a delightful dish that combines the rich, earthy flavor of mushrooms with the simplicity of rice.
