Jolpan is a traditional Assamese breakfast dish that typically includes a combination of puffed rice, flattened rice (poha), jaggery, yogurt, fruits, and nuts. It is a nutritious and flavorful dish. Here's a basic recipe for jolpan:

 

Ingredients:

 

1 cup puffed rice

1 cup flattened rice (poha)

1/4 cup jaggery, grated or powdered (adjust according to sweetness preference)

1/2 cup plain yogurt

Assorted fruits (such as banana, apple, papaya, or berries), chopped

Assorted nuts (such as peanuts, almonds, or cashews), chopped

A pinch of salt

Fresh grated coconut (optional)

 

Instructions:

 

Rinse the flattened rice (poha) in water and drain off the excess water. Allow it to sit for a few minutes to soften.

In a mixing bowl, combine the puffed rice and softened flattened rice (poha).

Add the grated jaggery, plain yogurt, and a pinch of salt to the bowl. Mix everything well to combine.

Add the chopped fruits and nuts to the mixture and gently toss to incorporate them.

If desired, sprinkle some fresh grated coconut on top for added flavor.

Serve the jolpan immediately and enjoy!
