 Mango and Millet Salad:

 

Ingredients:

 

For the Salad:

 

1 cup cooked millet(optional)

1 ripe mango, peeled and diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/4 cup toasted coconut flakes (optional)

For the Dressing:

 

2 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon honey or agave nectar (for sweetness)

Salt and pepper to taste

A pinch of cayenne pepper (optional, for a little heat)

Instructions:

 

In a large bowl, combine the cooked millet, diced mango, red bell pepper, red onion, fresh cilantro, and toasted coconut flakes (if using).

 

In a separate small bowl, whisk together the olive oil, lime juice, honey or agave nectar, salt, pepper, and cayenne pepper (if using).

 

Drizzle the dressing over the salad and toss gently to coat.

 

Chill the salad in the refrigerator for about 30 minutes before serving to allow the flavors to meld.
