Millet and Vegetable Salad:

 

Ingredients:

 

For the Salad:

 

1 cup cooked millet (you can use any type of millet like pearl millet, foxtail millet, or finger millet)

1 cup mixed vegetables (e.g., bell peppers, carrots, cucumber, cherry tomatoes), chopped

1/4 cup red onion, finely chopped

1/4 cup fresh herbs (e.g., cilantro, mint), chopped

1/4 cup roasted sunflower seeds or chopped nuts (e.g., almonds, walnuts)

For the Dressing:

 

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon honey or maple syrup (for sweetness)

1 clove garlic, minced

Salt and pepper to taste

 

Instructions:

 

In a large bowl, combine the cooked millet, mixed vegetables, red onion, fresh herbs, and roasted sunflower seeds or nuts.

 

In a separate small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, minced garlic, salt, and pepper.

 

Drizzle the dressing over the salad and toss to combine.

 

Serve immediately or refrigerate for a few hours to let the flavors meld.
