Gluten-free Greek salad

Greek salad is naturally gluten-free, as most of its ingredients are inherently free of gluten.:

 

Ingredients:

 

For the Salad:

 

2 large tomatoes, diced

½ cherry tomatoes

1 cup chopped green, yellow and red bell pepper

1 cucumber, diced

1 red onion, thinly sliced

1 green bell pepper, diced

1 cup Kalamata olives, pitted

1 cup crumbled feta cheese (ensure it's a gluten-free brand)

1/4 cup fresh parsley leaves, chopped

Salt and black pepper to taste

For the Dressing:

 

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar (check for gluten-free certification)

1 teaspoon dried oregano

1 clove garlic, minced

Salt and black pepper to taste

Instructions:

 

1. Prepare the Salad:

 

In a large salad bowl, combine the diced tomatoes, diced cucumber, sliced red onion, diced green bell pepper, and pitted Kalamata olives.

 

Sprinkle the crumbled feta cheese over the top of the vegetables.

 

Add the chopped fresh parsley for added flavor and color.

 

Season the salad with salt and black pepper to taste.

 

2. Make the Dressing:

 

In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper. Taste and adjust the seasonings as needed.

3. Combine and Serve:

 

Pour the dressing over the salad.
