Quinoa and Chickpea Salad

Quinoa and Chickpea Salad:

 

Ingredients:

 

1 cup quinoa, rinsed and cooked according to package instructions

1 can (15 oz) chickpeas, drained and rinsed

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh mint leaves, chopped

1/4 cup fresh corns

Juice of 1 lemon

3 tablespoons olive oil

Salt and pepper to taste

Instructions:

 

In a large bowl, combine the cooked quinoa, chickpeas, cucumber, cherry tomatoes,corns red onion, parsley, and mint.

In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste.

Pour the dressing over the salad and toss to combine.

Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
