Ingredients:

? 2 cups cooked basmati rice

? 4 eggs

? 1 onion, finely chopped

? 1 tomato, finely chopped

? 2 green chilies, finely chopped

? 1 teaspoon ginger-garlic paste

? 1/2 teaspoon turmeric powder

? 1/2 teaspoon red chili powder (adjust according to your spice preference)

? 1/2 teaspoon cumin powder

? 1/2 teaspoon garam masala powder

? Salt to taste

? 2 tablespoons oil or ghee

? Fresh coriander leaves, chopped (for garnish)

? Lemon wedges (for serving)

 

Instructions:

1. Heat oil or ghee in a large tawa or skillet over medium heat.

2. Add the finely chopped onion to the tawa and sauté until it turns translucent.

3. Add the ginger-garlic paste and green chilies to the tawa. Sauté for a minute until the raw smell disappears.

4. Add the chopped tomatoes to the tawa and cook until they soften and release their juices.

5. Crack the eggs directly onto the tawa and scramble them using a spatula.

6. Add turmeric powder, red chili powder, cumin powder, garam masala powder, and salt to the tawa. Mix well to coat the eggs and spices evenly.

7. Continue to cook the egg bhurji until the eggs are fully cooked and well combined with the spices. Stir occasionally to avoid sticking to the tawa.

8. Add the cooked basmati rice to the tawa and gently mix it with the egg bhurji, ensuring that the rice grains are well coated with the spices and eggs.

9. Cook for a few more minutes until the rice is heated through. Adjust the seasoning if needed.

10. Remove from heat and garnish with fresh coriander leaves.

11. Serve hot tawa egg bhurji rice with lemon wedges on the side.
