Muhroom Risotto

Mushroom risotto is a delicious Italian dish made with Arborio rice, mushrooms, and flavorful ingredients like onions, garlic, white wine, and Parmesan cheese. It's known for its creamy, slightly chewy texture and rich umami flavor. Here's a basic recipe for mushroom risotto:

 

Ingredients:

 

1 1/2 cups Arborio rice

8 oz (about 2 cups) fresh mushrooms, such as cremini or button mushrooms, sliced

1 small onion, finely chopped

2 cloves garlic, minced

4 cups chicken or vegetable broth, heated

1/2 cup dry white wine

2 tablespoons olive oil

2 tablespoons butter

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped, for garnish (optional)

Instructions:

 

Heat the olive oil and 1 tablespoon of butter in a large skillet or saucepan over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.

 

Add the minced garlic and sliced mushrooms to the pan. Cook for about 5-7 minutes or until the mushrooms are tender and any released liquid has evaporated.

 

Stir in the Arborio rice and cook for 1-2 minutes, making sure the rice is well-coated with the oil and slightly toasted.

 

Pour in the white wine and stir until most of it has been absorbed by the rice.

 

Begin adding the hot broth, one ladleful at a time, stirring continuously and allowing the liquid to be absorbed by the rice before adding more. Continue this process for about 18-20 minutes or until the rice is creamy and has a slightly firm center (al dente). You may not need all of the broth.

 

Once the rice is cooked to your desired consistency, remove the risotto from the heat. Stir in the remaining tablespoon of butter and the grated Parmesan cheese. Season with salt and pepper to taste.

 

Cover the mushroom risotto and let it rest for a few minutes to allow the flavors to meld and the texture to become even creamier.

 

Serve the mushroom risotto hot, garnished with fresh chopped parsley if desired. You can also sprinkle some additional Parmesan cheese on top for extra flavor.
