Chilli garlic fried rice

Chilli garlic fried rice is a spicy and flavourful variation of fried rice that combines the heat of chilli peppers with the aromatic flavours of garlic. It's a popular dish in many Asian cuisines. Here's a recipe for making chilli garlic fried rice:

 

Ingredients:

? 2 cups cooked rice (preferably chilled or day-old rice)

? 2 tablespoons oil (such as vegetable or sesame oil)

? 4 cloves garlic, minced

? 2-3 green chilies, thinly sliced (adjust according to your spice preference)

? 1 small onion, diced

? 1 carrot, diced

? 1 cup mixed vegetables (such as peas, bell peppers, corn, or broccoli)

? 2 tablespoons soy sauce

? 1 tablespoon chilli garlic sauce (or sriracha sauce for additional heat)

? Salt and pepper to taste

? Green onions, chopped (for garnish)

 

Instructions:

1. Heat the oil in a large skillet or wok over medium-high heat.

2. Add the minced garlic and sliced green chilies to the pan. Sauté for a minute until the garlic becomes fragrant and the chilies release their heat.

3. Add the diced onion and carrot to the pan. Stir-fry for a few minutes until the vegetables start to soften.

4. Add the mixed vegetables to the pan and continue stir-frying until all the vegetables are cooked and tender.

5. Push the vegetables to one side of the pan and add the chilled or day-old cooked rice to the other side. Break up any clumps of rice and stir-fry it with the vegetables.

6. Drizzle soy sauce and chilli garlic sauce (or sriracha sauce) over the rice. Mix well to evenly distribute the sauces and coat the rice and vegetables.

7. Season the fried rice with salt and pepper to taste. Adjust the seasoning and sauce quantities according to your preference.

8. Continue stir-frying for a few more minutes until the rice is heated through and slightly crispy.

9. Remove the pan from heat and garnish with chopped green onions.
