Saffron Sweet Rice

Saffron sweet rice, also known as "Zarda" or "Kesari rice," is a rich and aromatic dessert made with basmati rice, saffron, sugar, and a variety of nuts and dried fruits. It is a popular dish in South Asian and Middle Eastern cuisines, often served on special occasions and festive celebrations. Here's a recipe for making saffron sweet rice:

 

Ingredients:

? 1 cup basmati rice

? 1/2 teaspoon saffron threads

? 4 cups water

? 1/2 cup sugar (adjust according to your preference)

? 1/4 cup ghee (clarified butter)

? 1/4 cup chopped mixed nuts (cashews, almonds, pistachios)

? 1/4 cup raisins

? 4-5 green cardamom pods, crushed

? 1 cinnamon stick

? A pinch of edible orange food colour (optional)

? Rose water or kewra water (optional, for flavouring)

 

Instructions:

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.

2. In a small bowl, soak the saffron threads in 2 tablespoons of warm milk or water. Let it infuse for about 10 minutes.

3. In a large pot, bring water to a boil. Add the soaked and drained rice to the boiling water and cook until the rice is 70-80% cooked (still slightly firm). Drain the rice and set aside.

4. In a separate pan, heat the ghee over medium heat.

5. Add the crushed cardamom pods and cinnamon stick to the pan. Sauté for a minute until fragrant.

6. Add the chopped mixed nuts and raisins to the pan. Sauté until the nuts are lightly browned and the raisins plump up.

7. Add the cooked rice to the pan and mix gently to combine with the nuts and raisins.

8. Sprinkle the saffron-infused liquid over the rice and mix well to evenly distribute the saffron colour and flavour.

9. Add sugar to the pan and stir gently until the sugar dissolves completely.

10. If desired, add a pinch of edible orange food colour for an attractive presentation. Mix well.

11. Reduce the heat to low, cover the pan with a lid, and let the rice cook for about 10-15 minutes or until it is fully cooked and the flavours are well incorporated.

12. Once the rice is cooked, remove the pan from heat and let it rest, covered, for a few minutes.

13. Fluff the rice gently with a fork. Drizzle a little rose water or kewra water (if using) over the rice for added fragrance.

14. Serve the saffron sweet rice warm, garnished with additional nuts and dried fruits, if desired.
