Gluten-Free Chicken Noodle Soup

Gluten-Free Chicken Noodle Soup:

 

Ingredients:

2 boneless, skinless chicken breasts, cooked and shredded

8 cups gluten-free chicken broth

2 medium carrots, peeled and sliced

2 celery stalks, sliced

1 medium onion, diced

2 cloves garlic, minced

2 teaspoons dried thyme

Salt and pepper to taste

Gluten-free noodles of your choice (rice noodles or quinoa noodles work well)

 

Instructions:

In a large pot, heat some oil over medium heat. Add the onions, carrots, and celery, and cook until softened.

2.       Add the garlic and cook for another minute.

3.       Pour in the chicken broth and bring to a boil.

4.       Add the shredded chicken, dried thyme, salt, and pepper. Reduce the heat and simmer for about 20 minutes.

5.       Cook the gluten-free noodles separately according to package instructions.

6.       Add the cooked noodles to the soup just before serving. Adjust the seasoning if needed.

 

7.       Serve hot and enjoy your gluten-free chicken noodle soup!
