Phirni is a delicious and creamy Indian rice pudding made with ground rice, milk, sugar, and flavoured with cardamom, saffron, and nuts. It is a popular dessert often served during festive occasions. Here's a recipe to make Phirni:

 

Ingredients:

 

• 1/4 cup basmati rice

• 4 cups milk

• 1/2 cup sugar (adjust to taste)

• 1/2 teaspoon cardamom powder

• A pinch of saffron strands

• 2 tablespoons chopped almonds and pistachios

• Rose petals (optional) for garnishing

 

Instructions:

 

1. Wash the basmati rice under running water and soak it in water for 30 minutes. Drain the water and grind the rice to a coarse powder using a blender or grinder. Set aside.

2. Heat the milk in a heavy-bottomed saucepan over medium heat. Bring it to a boil and then reduce the heat to low.

3. Add the ground rice to the milk, stirring continuously to prevent any lumps from forming. Cook on low heat, stirring occasionally, until the mixture thickens and the rice is cooked through. It will take around 20-25 minutes.

4. Add sugar to the milk and rice mixture. Stir well until the sugar dissolves completely.

5. Crush the saffron strands between your fingers and add them to a tablespoon of warm milk. Let it sit for a minute to release its flavour and colour. Then add the saffron milk mixture to the pot and stir well.

6. Add cardamom powder to the phirni and mix well. Cook for another 2-3 minutes.

7. Remove the pot from heat and let the phirni cool to room temperature.

8. Once the phirni has cooled, transfer it to serving bowls or earthenware pots (traditional style). Garnish with chopped almonds, pistachios, and rose petals.

9. Refrigerate the phirni for at least 2-3 hours or until it is well chilled and set.

10. Serve the phirni cold as a delightful dessert.
