Shahi Paneer

Shahi Paneer is a rich and creamy Indian dish made with paneer (Indian cottage cheese) cooked in a luscious tomato and cashew-based gravy. Here's a recipe to make Shahi Paneer:

Ingredients:

• 200 grams paneer, cut into cubes or triangles

• 2 tablespoons ghee (clarified butter) or oil

• 1 medium onion, finely chopped

• 2 tomatoes, pureed

• 1/4 cup cashew nuts, soaked in warm water for 15 minutes and ground to a paste

• 1 tablespoon ginger-garlic paste

• 1 teaspoon cumin seeds

• 1/2 teaspoon turmeric powder

• 1 teaspoon red chilli powder (adjust to taste)

• 1 teaspoon garam masala

• 1/2 cup heavy cream

• Salt to taste

• Fresh coriander leaves for garnishing

 

Instructions:

1. Heat ghee or oil in a pan over medium heat. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until they turn golden brown.

3. Add ginger-garlic paste and cook for a minute until the raw smell disappears.

4. Add the tomato puree and cook until the mixture thickens and the oil starts to separate from the sides.

5. Add turmeric powder, red chilli powder, and salt. Mix well and cook for a minute.

6. Add the cashew paste and mix well with the spices. Cook for 2-3 minutes.

7. Reduce the heat to low and add the paneer cubes to the gravy. Stir gently to coat the paneer with the sauce. Let it simmer for a few minutes, allowing the paneer to absorb the flavours.

8. Add garam masala and mix well. Adjust salt and spices according to your taste.

9. Pour in the heavy cream and mix it gently into the gravy. Simmer for another 2-3 minutes.

10. Turn off the heat and garnish with freshly chopped coriander leaves.

11. Serve Shahi Paneer hot with naan, roti, or rice.
