Quinoa Khichdi

Ingredients:

1 cup quinoa

1/2 cup split yellow moong dal (lentils)

1 tablespoon ghee (clarified butter) or cooking oil

1 teaspoon cumin seeds

1 small onion, finely chopped

1 small tomato, chopped

1/2 teaspoon turmeric powder

1/2 teaspoon cumin powder

1/2 teaspoon coriander powder

1/4 teaspoon red chilli powder (adjust according to your spice preference)

Salt to taste

Fresh cilantro (coriander) leaves for garnish

 

Instructions:

1. Rinse the quinoa and moong dal separately under running water.

2. In a medium-sized pot, heat the ghee or cooking oil over medium heat.

3. Add the cumin seeds and let them splutter for a few seconds.

4. Add the chopped onions and sauté until they turn golden brown.

5. Add the chopped tomatoes and cook until they soften.

6. Add the rinsed quinoa, moong dal, turmeric powder, cumin powder, coriander powder, red chilli powder, and salt. Mix well to combine.

7. Pour 3 cups of water into the pot and give it a stir.

8. Bring the mixture to a boil, then reduce the heat to low, cover the pot with a lid, and let it simmer for about 15-20 minutes or until the quinoa and dal are cooked and tender. Stir occasionally to prevent sticking.

9. Once cooked, remove the pot from the heat and let it sit covered for a few minutes.

10. Fluff the quinoa khichdi with a fork and garnish with fresh cilantro leaves.

11. Serve hot and enjoy your nutritious quinoa khichdi!
