PINEAPPLE JAM RECIPE

Basic recipe for homemade pineapple jam that's gluten-free:

 

Ingredients:

 

1 large pineapple (about 3-4 cups of diced pineapple)

1 1/2 cups granulated sugar (adjust to taste)

2 tablespoons lemon juice (freshly squeezed)

1/2 teaspoon pure vanilla extract (optional)

Instructions:

 

Prepare the Pineapple:

 

·       Peel and core the pineapple.

·       Cut the pineapple into small pieces or chunks.

Blend or Process the Pineapple:

 

·       Transfer the pineapple chunks to a food processor or blender.

·       Pulse or blend the pineapple until it becomes a fine puree. You can leave it slightly chunky if you prefer.

Cook the Pineapple Puree:

 

·       In a large, heavy-bottomed saucepan, combine the pineapple puree, sugar, and lemon juice.

·       Stir well to combine.

Cook Over Medium Heat:

 

·       Place the saucepan over medium heat and bring the mixture to a boil, stirring frequently to prevent sticking and burning.

Simmer:

 

·       Reduce the heat to low and let the mixture simmer. Continue to cook, stirring occasionally until the jam thickens. This can take about 30-45 minutes, but the time may vary depending on your stove and the moisture content of the pineapple.

Test for Doneness:

 

·       To check if the jam is ready, place a small amount on a chilled plate. If it sets and wrinkles when you push it with your finger, it's done. If not, continue to simmer and test again in a few minutes.

Add Vanilla (Optional):

 

If desired, stir in the vanilla extract during the last few minutes of cooking.

Cool and Store:

 

·       Remove the saucepan from heat and let the pineapple jam cool to room temperature.

·       Transfer the jam to sterilized jars or containers.

Store the Jam:

 

·       Seal the jars tightly and store them in the refrigerator. The jam will continue to thicken as it cools.
