Buckwheat porridge with Mushroom

post-title

Buckwheat porridge with mushrooms is a hearty and nutritious dish that's easy to make. It combines the nutty flavour of buckwheat with the earthy taste of mushrooms. Here's a simple recipe for buckwheat porridge with mushrooms:

Ingredients:

1 cup buckwheat groats

2 cups water

8 ounces (about 2 cups) mushrooms, sliced (use your favorite variety)

2 tablespoons butter or olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon dried thyme (or use fresh thyme if available)

Salt and pepper to taste

2 cups vegetable broth (or mushroom broth for extra flavor)

Chopped fresh parsley for garnish (optional)

Grated Parmesan cheese for garnish (optional)

Instructions:

Rinse the Buckwheat:

Rinse the buckwheat groats under cold water until the water runs clear. Drain well.

Sauté Mushrooms:

Heat a large skillet or saucepan over medium-high heat and add the butter or olive oil.

Add the sliced mushrooms and sauté them until they start to brown and release their moisture, about 5-7 minutes.

Remove half of the sautéed mushrooms and set them aside for later garnish.

Cook Onion and Garlic:

To the remaining mushrooms in the pan, add the chopped onion and minced garlic. Sauté for another 2-3 minutes until the onion becomes translucent.

Toast the Buckwheat:

Add the rinsed buckwheat groats to the pan with the mushrooms, onion, and garlic. Toast the buckwheat for a few minutes until it becomes fragrant.

Season and Add Broth:

Stir in the dried thyme, salt, and pepper.

Pour in the vegetable broth and bring the mixture to a boil.

Simmer:

Reduce the heat to low, cover the pan, and simmer for about 15-20 minutes or until the buckwheat is tender and has absorbed the liquid. Check the cooking time on the buckwheat package for specific instructions.

Fluff and Garnish:

Once the buckwheat is cooked, fluff it with a fork.

Garnish with the reserved sautéed mushrooms, chopped fresh parsley, and grated Parmesan cheese if desired.

Serve:

Buckwheat porridge with mushrooms can be served as a hearty side dish or a vegetarian main course.

Enjoy your buckwheat porridge with mushrooms! It's a wholesome and satisfying dish that's perfect for a comforting meal.
