Gluten-free Mango Chia Seed Pudding recipe:

 

Ingredients:

 

1 cup ripe mango, diced (about 2 large mangoes)

1/4 cup chia seeds

1 1/2 cups coconut milk (or any other non-dairy milk of your choice)

2-3 tablespoons honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract (optional)

Fresh mango slices and mint leaves for garnish (optional)

Instructions:

 

Prepare the Mango Puree:

 

Peel and dice the ripe mangoes.

Place the mango pieces in a blender or food processor and blend until you have a smooth mango puree. You can add a little water if needed to help with blending, but try to keep it as thick as possible.

Mix Chia Seeds and Milk:

 

In a mixing bowl, combine the chia seeds and coconut milk (or your chosen non-dairy milk). Stir well to combine.

Let the chia seed mixture sit for about 5-10 minutes, stirring occasionally. This allows the chia seeds to begin absorbing the liquid and swell.

Add Mango Puree:

 

Add the mango puree to the chia seed mixture and mix thoroughly.

Sweeten the mixture with honey or maple syrup to your desired level of sweetness. You can start with 2 tablespoons and add more if needed.

If you like, add vanilla extract for extra flavor.

Chill the Pudding:

 

Cover the bowl or transfer the mixture into individual serving jars or glasses.

Refrigerate for at least 2-3 hours, or preferably overnight. This gives the chia seeds enough time to absorb the liquid and create a pudding-like consistency.

Serve:

 

Once the pudding has set, remove it from the refrigerator.

Garnish with fresh mango slices and mint leaves if desired.
