Gluten-Free Rice Pudding

Gluten-Free Rice Pudding:

 

Ingredients:

 

1/2 cup Arborio rice (or any gluten-free rice)

2 cups whole milk or coconut milk for a dairy-free option

1/4 cup sugar or sweetener of your choice

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

A pinch of salt

Raisins, frozen cranberries, or chopped nuts for garnish (optional)

Instructions:

 

In a medium saucepan, combine the rice and milk. Bring to a simmer over medium heat, then reduce the heat to low and simmer gently, stirring frequently, for about 20-25 minutes or until the rice is tender and the mixture has thickened.

 

Stir in the sugar, vanilla extract, ground cinnamon, and a pinch of salt. Continue to cook for an additional 5 minutes, or until the pudding has reached your desired consistency.

 

Remove the saucepan from the heat and let the pudding cool slightly.

 

Serve warm or chilled, garnished with raisins, frozen cranberries, or chopped nuts if desired.
