Gluten-Free Chocolate Avocado Pudding

Gluten-Free Chocolate Avocado Pudding:

 

Ingredients:

 

2 ripe avocados, peeled and pitted

1/4 cup cocoa powder

1/4 cup honey or maple syrup

1/4 cup coconut milk (or any non-dairy milk)

1 teaspoon vanilla extract

A pinch of salt

Fresh berries and chopped nuts for garnish (optional)

Instructions:

 

Place the ripe avocados, cocoa powder, honey or maple syrup, coconut milk, vanilla extract, and a pinch of salt in a blender or food processor.

 

Blend until the mixture is smooth and creamy, scraping down the sides of the blender or food processor as needed.

 

Taste the pudding and adjust the sweetness if necessary by adding more honey or maple syrup.

 

Transfer the pudding to serving dishes and chill in the refrigerator for at least 30 minutes before serving.

 

Garnish with fresh berries and chopped nuts if desired.
